Pizza Crust
1&1/2 T. Yeast
2 C. Warm water
1 egg (optional)
1/2 C. Oil
1/4 C. Sugar
1 tsp. Salt
5 C. Flour Unbleached Flour
1 C. Whole Wheat Flour
1 C. Whole Wheat Flour
Mix Yeast with 2 C. flour,
sugar and salt. Add water,
oil and egg and mix well.
Add remaining 5 cups of
flour a little at a time and
then kneed bread. Place
covered in a warm place
until double in size.
Kneed dough and divide into
4 balls. Using a tsp or so
of oil on your hands coat
the ball before attempting
to spread onto pizza pan.
Bake the crust 5 min. at 375
degrees then add your
toppings or store in the
freezer for later use. Makes
four 12" Pizza crust or 2
Pizza crusts and a loaf of
bread.

Cinnamon Oatmeal Muffins
1/3 C. Oil
1/2 C. Sugar
1/4 tsp. Salt
2 Eggs
1 tsp. Baking Soda
1 tsp. Baking Powder
2/3 C. Oat Meal
1/3 C. Bran
1&1/2 C. Flour
1 C. Sour Milk
1/2 tsp. Cinnamon
1tsp. Vanilla
1/2 C. Brown Sugar
Stir together Oil and Sugar.
Add salt, eggs, soda, baking
powder, vanilla, cinnamon,
Stir well. Add sour milk
(can sour milk with a little
vinegar), oat meal, bran and
flour, stir well. Add Brown
sugar last and only stir in
lightly (so it looks like
dark swirl in the batter).
Makes about 12 to 16
muffins. Bake at 400 degrees
for 15 min.

Italian Salad Dressing
3/4 C. Water
1/2 tsp. Knox Unflavored
Geletin
1/4 C. Vinegar
1 Tbs. Sugar
1 tsp. Salt
1 Tbs. Minced Onion
1 tsp. Italian Seasoning
1/2 tsp. Mustard Seeds
1/2 tsp. Garlic powder
1/4 tsp. Pepper
1/2 C. Salad Oil
In a small sauce pan bring
water to a near boil. In
another container put all
dry Ingredients. Then add
hot water and stir, to melt
the geletin. Add Vinegar and
Oil. Chill 2 hrs before use.
Shake well before use.
Is great over most any
salad. Add some dried tomato
chips to pasta and use to
dress a pasta salad.

I use the Chocolate Drink
mix from
Walmart (great value) and it
is really good
1 C. powdered instant non
dairy creamer
1 C. chocolate-flavored
drink mix
1/2 C. instant coffee
1/2 C. Sugar
1/2 tsp. ground cinnamon
Mix all ingredients and use
2 Tbls mix / cup.
I cut the creamer in half
and then make it
with milk if you want a more
nutritious drink.

If vegetable oil spreads
right from the refrigerator
are handy to you, you might
find this recipe a healthy
alternative:
2 sticks Butter (1/2 lb)
2 Tblsp. Water
1 cup Olive or Canola Oil
1/4 tsp. Salt
Allow Butter
to warm to room temperature.
Put in blender with
remaining ingredients. Blend
until smooth. Refrigerate.
Makes about 2 cups.

My Favorite Muffins
Soak 1/2 C. Bran and add
water to make 1 Cup while
mixing remaining
ingredients.
2 C. Flour
1 T baking Powder
1/2 tsp. salt
1 C packed Brown Sugar
2 eggs
1 tsp. Vanilla
1/4 C Milk
3 T. Oil
1 C Nuts (optional)
Mix all
ingredients and then add the
bran and water. Put in
greased muffin tins makes 14
-16 muffins. I like to make
8 muffins one day and save
remaining batter for quick
muffins another day. Bake
at 400 degrees for 15 min.
Can substitute for Bran and
water: 1 C. Apple sauce,
or Pumpkin sauce or Grated
zucchini and 1/2 t.
cinnamon. Can use recipe to
make 2 small loaves of bread
and bake at 350 degrees for
about 1 hour. Have found
that Wheat Germ or Malt O
Meal work good instead of
the Bran.

Favorite Cookies
1-1/2 c butter or margarine
1 c white sugar
1 c brown sugar
3 eggs
2 t baking soda
1 t salt
2 t vanilla
1/2 c whole wheat flour
1 c rolled oats
3 c unbleached flour
1 c (12 oz
pkg) chocolate chips
1c Chopped
nuts
Cream together 1st 4
ingredients. Stir in next 6
ingredients,
then add chips and nuts.
Chill dough. Form into
balls and flatten
Bake 8 min. at 375 degrees.
(makes about 6 dozen)

Dilly Dills
3 C. Apple Cider Vinegar
8 C. Water
To each Qt. jar add:
One head of dill (or 1/2tsp.
dill seed)
2 Slices Onion
1 Clove Garlic
Pack with vegetable of
choice: Cucumber, Beans,
Carrots, Peppers, what ever.
1/2 tsp. Mustard seed
2 tsp. Salt
1 tsp. Sugar to carrots only
Boil first 2 ingredients
together for your brine.
Put dill, onion and garlic
in the bottom of the jar.
Then pack jars with
vegetables. Then add
mustard seed, salt and sugar
for carrots. Add boiling
brine to jars filling to 1/4
in. head space. Process in
hot water bath for 15 min.
for beans and carrots,
cucumbers and peppers only
process for 5 min. May add a
dash of red pepper if you
like to spice it up. The
above brine fill about 7 qts.
after packed with
vegetables.

2 T. Lemon Juice
2 T. Honey
1/2 tsp. Onion powder or
fresh minced onion as much
as you like
1/2 tsp. Salt or favorite
seasoned salt
1/4 tsp. Pepper
1 tsp. Worcestershire sauce
1/2 to 1 C. Orange Juice
For beef we like to add
Italian Seasoning and a
Squirt of our favorite Steak
sauce.
For pork we like extra Onion
and Worcestershire sauce
For chicken we like to add
Garlic mince or powder and a
little poultry seasoning.
Use this marinade with 1/2
C. Orange Juice to put on
meat while grilling. Use it
with 1 C. Orange Juice to
marinate meat a few hour or
overnight for tougher cuts
of meat. It is also good to
put with a roast for baking.

Chris' Salmon Sauce
4 T Mayonnaise
2 T Margarine (melted)
2 T Lemon Juice
3/4 t Mustard powder
1/4 t Dill seed (optional)
1 t Minced garlic
1 T Sugar
1/4 t Salt
Mix
ingredients together and
brush on Salmon steaks
before grilling and again
while cooking. Grill salmon
skin side down, do not turn.
Cook on Medium heat. Will
flake with a fork when done,
15-20 min. Peel meat off
skin leaving skin on grill
until grill cools.
Hey for a good buy on Salmon
check at the meat counter
and ask your grocer for a
whole fresh frozen Salmon.
Sometime you can get it for
nearly $1/lb.
